Default model to eleven_multilingual_v2 to match actual pipeline workflow
Every other Turn Review default (speed, comma/period pause, stability, similarity boost, style) already matched the July Launch pipeline's Step 8 config; the model dropdown was the one outlier, defaulting to v3 instead of the multilingual_v2 model actually used in production. Also add test-sample/ — a real 2-turn excerpt from STT_GR_0037-5's actual pipeline output (turns.json + translated VTT), for trying out Turn Review without needing to run the full pipeline first.
