refactor: rename "indicators" to "EO products" throughout

feat: add test fixtures for EO product overhaul

refactor: strip to 4 real EO indicators, remove all tests and mock fallbacks

test: extract shared helpers to conftest, strengthen harvest assertions

test: add synthetic GeoTIFF fixtures for raster map tests
