docs: update license references from MIT to Apache 2.0

LICENSE file was already Apache 2.0, but README and pyproject.toml
incorrectly referenced MIT. Now consistent across:
- README.md: HF Spaces metadata, badge, and license section
- pyproject.toml: license field and classifier
