Update model card with Primus paper link and image-segmentation tag

This PR updates the model card to include a link to the Primus paper, which introduces the Transformer-centric architectures used for these checkpoints. Additionally, the pipeline_tag has been updated to image-segmentation to better reflect the intended downstream use case in medical imaging. Relevant citations for both the OpenMind benchmark and the Primus paper have also been added.
