Add pipeline tag and improve model card

Hi! I'm Niels from the community science team at Hugging Face. This PR adds the image-classification pipeline tag to the model card's metadata, which helps users discover the model when filtering by task on the Hugging Face Hub. I've also formatted the README to include links to the paper and the official GitHub repository, as well as usage instructions derived from the project documentation.
