Add pipeline tag and improve model card

Hi! I'm Niels from the Hugging Face community science team. I'm opening this PR to improve your model card.
I've added the image-classification pipeline tag to the metadata to improve the model's discoverability on the Hub. I've also updated the README to include a brief overview of the CARE Transformer architecture, its performance results on ImageNet-1K as reported in the paper, and the official BibTeX citation.
