Update Weights filenames

I got this error when trying to use this model:
OSError: ai4colonoscopy/ColonR1 does not appear to have files named ('model-00001-of-00002.safetensors', 'model-00002-of-00002.safetensors'). Checkout 'https://huggingface.co/ai4colonoscopy/ColonR1/tree/main' for available files.
It appears the saftensors files did not follow the expected naming pattern which I have addressed in this PR.
