Improve model card: add paper/code links, license and sample usage

Hi! I'm Niels from the community science team at Hugging Face. This PR improves the model card for HoliTok by:
- Updating the license to Apache 2.0 based on the official repository.
- Adding links to the original paper and the GitHub repository.
- Including a sample usage section with a code snippet for inference extracted from the documentation.
- Adding the BibTeX citation.
Thank you for the helpful contribution! The metadata and dataset card improvements look good to me, and I’ve merged this PR.
