docs: make Paraformer-en model card directly usable

Replace the stale generic FunASR template with a focused English Paraformer card. The new card adds a verified Hugging Face quick start, VAD and punctuation pipeline, OpenAI-compatible serving path, artifact provenance, limitations, and current project links. Existing license metadata is preserved.
