Hi! I'm Niels from the Hugging Face team. This PR improves the model card for V-Co by:

Adding the unconditional-image-generation pipeline tag to the metadata.
Including links to the original paper and the official GitHub repository.
Providing a summary of the V-Co method.
Adding an evaluation command as a sample usage guide.
Adding the proper BibTeX citation for the paper.
