Add pipeline tag

This PR adds the pipeline_tag metadata to ensure the model can be found via the image-segmentation pipeline filter on the Hub.
Applied and fast-forwarded to main as commit 8f667d3fa74019dc2f221d75ef628acee627c590 after verifying the model-card metadata. No checkpoints, manifest entries, or LFS objects changed.
