This PR significantly enhances the model card for internlm/Intern-S1-mini-GGUF by:

• Adding library_name: transformers to the metadata, which enables the convenient "How to use" widget on the model page with runnable code examples.
• Adding a direct link to the paper: Intern-S1: A Scientific Multimodal Foundation Model.
• Adding a link to the main GitHub repository: https://github.com/InternLM/Intern-S1.
• Adding a link to the online chat demo: https://chat.intern-ai.org.cn/.
• Integrating detailed transformers code examples (for text, image, and video input) into a new "Quick Start (Transformers)" section, making it easier for users to get started. The model_name in these examples has been updated to internlm/Intern-S1-mini to correctly reflect the Hugging Face Transformers compatible model.
• Clarifying the llama.cpp related sections with specific headings like "Inference (llama.cpp)" and "Serving (llama.cpp)".

These changes improve the completeness, discoverability, and user-friendliness of the model card.
