Add pipeline tag and improve model card discovery

This PR improves the model card by adding the graph-ml pipeline tag to the metadata, which helps users find the model when filtering by task on the Hub. I have also added a brief summary of the model's architecture and features based on the paper, and included the BibTeX citation for researchers who use these checkpoints.
