Is the model direction correct?

I tried to apply the model in the es->arg, and I got a sequence with + words in Spanish. When doing it the other way around, it did translate from Aragonese to Spanish.

You are correct. the Model is actually arg-es. Between today and tomorrow I will rename this repo to arg-es and upload the es-arg model. I will also improve the readme and instructions.

It's not so important, but since you are renaming it, it's more intuitive if you use either ISO 639-1 or ISO639-2 codes (i.e. either es-an an-es or spa-arg arg-spa). Just a suggestion.
