Add pipeline tag and improve model card

Hi, I'm Niels from the Hugging Face community science team. I noticed this model repository is missing some metadata and structured information. This PR adds the depth-estimation pipeline tag to the metadata for better discoverability and improves the README by providing a clearer description and the official BibTeX citation.
