Add pipeline tag and update paper/project links

Hi! I'm Niels from the Hugging Face community team.

This PR improves the model card by:

Adding the pipeline_tag: depth-estimation to the metadata to improve discoverability.
Replacing the placeholder TODO links with the official paper (arXiv:2603.26658) and project page (zedd.cs.princeton.edu) URLs.
Updating the README content to include the correct citation and acknowledgment sections from the official repository.
