Add pipeline tag and remove arxiv tag from metadata

This PR adds the pipeline_tag: image-classification metadata so the model is correctly categorized on the Hub. It also removes the arxiv:2609.33437 tag from the YAML metadata, since the arxiv ID should only be referenced in the markdown content. No other content changes are needed.
